Question:
I'm new in Boston and I was thinking of taking a cooking class. I'm not a beginner, but I'm not a gourmet either (just a 10-yr rfc lurker). I was thinking maybe French cooking? Sauces? Cheese? Any suggestions?

The Boston Center for Adult Education may be better for you--less expensive and you don't have to train for Chef. They often offer seasonal cooking, wines, cheese courses and the like.
The Cambridge Center for Adult Education also has classes (though I've never taken one of their cooking ones myself). They just came out with their catalog for next semester--call or pick one up outside their offices on Brattle St in Harvard Sq (near the Crate and Barrel).
There are some decent cooking courses offered through Brookline Adult education -- they're into the term now, but they run them all year long. They'll do, depending on who they have available, various cuisines, etc. I've seen Thai cooking as an offering, as well as Italian. They're inexpensive, and easy to get to (usually).
I currently have no association with them, but did teach (music) with them for two years. (In case someone asked why I recommended them... I'm familiar with their course catalogue. I have no idea how the cooking courses are, but I know that their selection process for faculty, at least in music, is somewhat picky, which is good.)
