On a related note.......

I've always pronounced focaccia as foe-kay-shuh.

I just hear it pronounced foe-caught-chuh.

So just how does one pronounce this word ???

I took a course at the Cambridge Adult Education Center entitled: Pizza, Calzone, and Foccacia

by Anna Nathanson. Anna is a native Italian who's been teaching Italian cooking courses in Cambridge for 20 years. She pronounced it as Stephanie did. I assume that's definitive. By the way, real foccacia is made with about 3 quarts of olive oil per loaf of bread. The other seasonings are incidental. Italians don't worry about low-fat!!
