I'm new in Boston and I was thinking of taking a cooking class. I'm not a beginner, but I'm not a gourmet either (just a 10-yr rfc lurker). I was thinking maybe French cooking? Sauces? Cheese? Any suggestions?

Cambridge School of Culinary Arts. Go to their open house, or ask for a tour. What did you mean by "cheese"? Plan on making your own? The Boston Center for Adult Education may be better for you--less expensive and you don't have to train for Chef. They often offer seasonal cooking, wines, cheese courses and the likeThe Cambridge Center for Adult Education also has classes (though I've never taken one of their cooking ones myself). They just came out with their catalog for next semester--call or pick one up outside their offices on Brattle St in Harvard Sq (near the Crate and Barrel).
